Hurricane Bob’s Barbecue Bible

Red jalapeno- the red of this pepper has a fuller taste than the green; it has more of a ripened finish.

Orange habanero – has a completeness of flavor that the green or unripened pepper does not; similar   to the popular bell peppers.

Fruit adds a sweet factor to the different heat level of the chili pepper and seems to dissipate the hotness of the finale experience of the fun we have with hot sauces.

Mango has a tropical flavor all its own and mixes well with a plethora of styles and personal tastes, that make creating recipes in your kitchen rewarding.

Papaya has a similar island feel, but with a softer, smoother after taste that goes well with seafood and chicken, as well with veggies. All of the sauces are great to marinate when grilling in or outside!

Cherry has the deepest, dark and rich finish of all my sauces. Duck and chicken seem to be made for the cherry experience that you will find first rate.

Apple is the natural blend with curry spice and the heat of the habanero, this is my personal favorite and if you like curry it may be yours too!

My dry-rubs are a result of years of cooking for a living and the fun of grilling for my friends and soon to be friends. Each rub has an individual and unique result, they can be used just about any way the chef can come up with to please their fans.  Be careful when blackening indoors, smoke alarms. Use to spice up stews, chili, soups, sauces, marinades, and a rub on seafood, poultry, pork and beef.

Force 5 is the hottest and a favorite when blackening. You can use the others as well for this, or you can mix in some of the coffee rub for a deeper softer heat that has great taste.

4 pepper features the four basic peppers, black, red, white and paprika, which translates to “pepper” in a few different tongues.  Heat is still a component to deal with and still provides a flavor that you will not soon forget.

Cajun cooking is one of my favorite cooking styles that is happy in a kitchen or outside on the grill or the BBQ.  Two distinct ways of cooking are with wood and or charcoal. A pinch of my Cajun rub in a gumbo, jambalaya, or your favorite Louisiana dish is the taste you have been seeking.

Memphis rub and pork go together like the moon and the stars; for times when cooking in the early a.m. is essential to pig! A mix of spices and brown sugar are a result of years of fun with pigs that I was able to find the correct blend that lends itself to pork, though experiment to find your own style.

Seafood is a favorite for everyone and can be a part of many dishes.  My rub has a pleasant result that will surprise the discriminating chef.  The heat and flavor add a distinct finish not soon forgotten and you will use not just with seafood, but utilize in your favorite dishes. You will feel like you are standing on the boardwalk at your favorite beach side resort.

Coffee is a different taste for a rub and it has a distinct result that you will love. I said before that it mixes well with others and loves the outdoors. Try on a beer-can chicken for fun and flavor with friends and family. This is my mildest rub so kick it up if you dare, I double-dog dare you!

Salsas are one of the most popular condiments in the world and can be used in many different styles of cooking and entertaining. The Black Bean & Corn has an earthy quality that goes well with dipping, slathering, mixing with whatever your imagination can provide for you. Mix in some sour cream and chopped onions for a dip that will dazzle others.

Pineapple and habanero are a combo that will stay on “favorite” menu for a long time.  There is the heat factor, so be wise. Try topping on chicken and finish in the oven, you may kiss or be kissed, be careful who is nearby. Equally as good on seafood, pork or even a casserole- whoo-woo, you will be blown away!

BBQ sauces are as different as there are grills and smokers in use as the pit masters that are manning the fires. Most store bought sauces have to be adjusted, what makes HB’s user friendly is that you may use it as is. It has taste and kick when tasted straight out of the bottle that stands alone or can be bumped up a few notches, that’s your choice.

Curry ketchups are popular in most places, except the USA, though not so much with the international flair that is prevalent in today’s life-styles. My brother lives in Germany and told me of the popularity of curry ketchup. Try mine in place of regular ketchup and see what you taste!  I think you will find it needs to be an everyday condiment.
